In honor of Poultry Day, here’s a quick and easy recipe to try.

Chicken Casserole

1 boned chicken (boil your own or buy a rotisserie one)
1 onion chopped and sautéed in 2 Tablespoons of butter
1 small can chopped green chilies
1 can cream of mushroom soup
1 can cream of chicken soup
½ cup milk
Flour tortillas
Grated cheese to taste

Mix chicken, onion and green chilies together.
Heat flour tortillas one at a time in buttered skillet until limp.
Fill with chicken mixture.
Roll and place close together, seam side down in a lightly greased 9×11 pan/baking dish
Heat:
1 can cream of chicken soup
1 can cream of mushroom soup
½ cup milk
Pour over tortillas
Sprinkle with grated cheese
Bake uncovered in 350-degree oven until heated and cheese is melted.
