In Celebration of Chocolate Covered Raisin Day!!

Ingredients:

3/4 cup all purpose flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 cup light brown sugar
1/2 cup granulated sugar
1/4 tsp. salt
1/2 cup butter, softened
1 large egg
1/2 tsp. vanilla extract
1 1/4 cups old fashioned oats
1/2 cup chocolate covered raisins
1/2 cup pecans (optional)
Directions:
Preheat oven to 375 degrees
Combine flour, baking soda, baking powder, and salt, set aside.
In a large bowl, combine butter, vanilla, and sugars, beat until creamy.
Add the egg, then gradually add flour mixture and oats, mix well.
Stir in raisins and pecans.
With a small melon scoop or tablespoon, drop mixture onto a parchment lined cookie sheet.
Bake for 8-10 minutes. Cool on wire racks. Makes about 30 cookies.
